The Dylan
Amsterdam, The Netherlands

Amsterdam, in all its layered contradictions and easy glamour, is one of those cities that never quite behaves itself in the way you expect. It is at once composed and chaotic, historic and defiantly modern, sensual yet studiously restrained. It is precisely this duality that makes it such a magnet for OutThere travellers: those who value design, discretion and a sense of lived-in sophistication over anything remotely formulaic. And if there is a hotel that understands the rhythm of Amsterdam life with almost intuitive grace, it is The Dylan Amsterdam. This luxury boutique hideaway perfectly encapsulates the city’s blend of heritage, creativity and confidence, making it an ideal base for a fun-filled immersion into the Dutch capital.

Tucked away on the Keizersgracht, within the elegant loop of the city’s UNESCO-listed canal belt, The Dylan Amsterdam is the sort of property you might walk past twice before realising quite how special it is. There is no overt architectural grandstanding, no unnecessary theatrics at the entrance. Instead, an understated gateway opens into a world that feels intimately private and thoughtfully composed.

The outside world dissolved almost immediately as we passed through, replaced by hushed tones, soft lighting and an almost monastic sense of calm. The building itself has lived many lives, most notably as a 17th-century orphanage and later a bakery. History is written into the walls, expressed through subtle architectural gestures: original brickwork framed by contemporary lines, corridors that narrow and widen like a gentle breath, and windows purposefully positioned to remind you that the canals are never far away.

It is precisely this sense of controlled contrast that defines The Dylan’s design language. Curated public spaces showcase a refined palette of muted greys, soft earth tones and occasional flashes of deep velvet or polished brass, avoiding visual noise for design’s sake and encouraging a sense of stillness. One has the sense that everything here has been placed with intent, yet nothing is trying too hard.

Our Serendipity Junior Suite – aptly named, given the sense of delightful discovery it evoked – was generously proportioned by Amsterdam standards, a city where space is often the ultimate indulgence. Overlooking the Keizersgracht, our room offered a cinematic view of canal life unfolding below: cyclists gliding past in effortless rhythm, boats slipping through the water, and the occasional neighbour leaning from a townhouse window checking the weather.

Inside, the suite continued the hotel’s restrained aesthetic. There was no excess and no unnecessary flourish. Instead, comfort was expressed through texture and proportion: crisp linens, sculptural furniture, and a bathroom that felt more like a private wellness chamber than a functional necessity. It was a space that encouraged lingering – because it simply felt good to remain still in it for a while.

At the rear of the property, other rooms open onto the hotel’s garden terrace – an almost secretive space in the heart of the canal district. It is here that The Dylan reveals one of its most compelling contradictions: a sense of urban immersion paired with hush. In warmer months, this courtyard gently comes alive, offering a secluded retreat from the energy of the city beyond.

Of course, no stay at The Dylan would be complete without experiencing its culinary crown jewel, Restaurant Vinkeles. Housed within what was once the hotel’s 18th-century bakery, this two Michelin-starred restaurant honours its heritage and offers a contemporary interpretation of French fine dining, though to call it simply that feels reductive. Dishes arrive as carefully composed narratives – precise, balanced and often quietly surprising in their combinations. There is a discipline to the cooking here that mirrors the hotel’s broader philosophy. Nothing feels overworked; nothing is included without reason. We let each course arrive like a thoughtful interruption to conversation. After dinner, Bar Brasserie OCCO offered a more relaxed counterpoint – less formal, but no less considered, our cocktails mixed with an unhurried hand, and the boundary between hotel guest and local begins to blur.

Which leads us on to Amsterdam itself.

It would be impossible to speak of The Dylan Amsterdam without acknowledging its position as a launchpad into one of Europe’s most compelling cities. The Nine Streets neighbourhood, just beyond the hotel’s doorstep, is one of Amsterdam’s most characterful enclaves: a labyrinth of independent boutiques, concept stores, vintage galleries and cafés that seem to exist in a perpetual state of quiet discovery. Beyond that, the wider canal belt offers endless opportunities for aimless wandering – arguably the city’s most rewarding activity.

It was after one such night of wandering – though “wandering” may be an overly gentle word for what had been a rather spirited immersion in Amsterdam’s queer nightlife scene at Spielraum – that the true character of The Dylan revealed itself most clearly. Returning in the soft, uncertain light of dawn, slightly dishevelled and carrying the faint residue of a night that had stretched joyfully beyond any sensible hour, one might have expected the usual choreography of judgement or indifference from hotel staff.

Instead, there was nothing but ease. No raised eyebrows. Just a warm acknowledgement of our return, an effortless smile, and the quiet offer of water or anything else that might make the transition back to stillness a little smoother. It is a small moment, but one that speaks volumes about the hotel’s understanding of modern luxury hospitality: discreet, unassuming, human. It understands that its guests come from all walks of life, of every inclination, and that Amsterdam, perhaps more than most cities, is best experienced without apology.

So who, then, is The Dylan for?

It is not a hotel that tries to cater to everyone. Instead, it feels ideally suited to travellers who appreciate nuance over noise – those who value design intelligence, culinary integrity and a sense of place that is felt rather than explained. Couples seeking a romantic urban retreat will find it particularly compelling, as will solo travellers with an appetite for culture (or like us, nightlife), or creative professionals who prefer their luxury unbranded and unbragged.

What distinguishes The Dylan Amsterdam from other high-end properties in Amsterdam is precisely this refusal to conform to a single narrative of luxury. Where some hotels lean heavily into canal-house romance or contemporary maximalism, The Dylan occupies a more ambiguous, and arguably more interesting, middle ground. It is historical without being nostalgic, modern without being cold, and exclusive without ever feeling exclusionary.

In a city defined by its openness, The Dylan offers a sense of curated privacy. It invites you simply to inhabit it – and Amsterdam – fully, vibrantly and on your own terms.

While you’re OutThere

For the best cookies in Amsterdam (albeit not that kind), turn right out of The Dylan and stroll to the end of the block where the bridge crosses the canal. There you’ll find Banketbakkerij Het Koekemannetje – a mouthful in more ways than one. Hidden among the charming boutiques of the Nine Streets, this beloved bakery has built a cult following for its handmade cookies, baked fresh throughout the day and packed with premium Belgian chocolate. Their beautifully presented tins make wonderfully edible souvenirs, assuming you can resist devouring the contents before your flight home.

Afterwards, continue wandering through the surrounding Nine Streets. This picturesque maze of independent fashion boutiques, vintage stores and specialist design shops offers a more authentic glimpse of Amsterdam than the city’s busier tourist thoroughfares and rewards aimless exploration in the very best Amsterdam tradition.
